A Vienna classic of indulgence

„That he must not make a disgrace of me this evening!“ – It was with this admonition from Prince Metternich in 1832 that the success story of the Original Sacher-Torte began. When a dessert was to be created at the prince’s court, the 16-year-old apprentice chef Franz Sacher stepped in for the ill head chef. And he created a confection that could not have been more delicious – the Original Sacher-Torte. To this day, the Original Sacher-Torte is still made by hand in the Original Sacher-Torten Manufaktur according to the original recipe by Franz Sacher, and tastes best with a portion of unsweetened whipped cream – or, as it is known in Austria, Schlagobers!

Some critics surely complained that the cake was rather plain, and of course there were more elaborate creations too. But if you look at it carefully, you will see that the most brilliant things in the modern world are in fact of great simplicity. Compared with other achievements in Western cultural history, the Original Sacher-Torte is closer to Bauhaus than to Baroque.

“Elegance is refusal,” Coco Chanel later said - and yes, Franz Sacher did in fact refuse everything superfluous when making his cake. He left out everything unnecessary and composed his chocolaty stroke of genius “simply” with butter, sugar, eggs, chocolate, flour, vanilla and apricot jam. It is indeed the perfect harmony of all these ingredients that makes the Original Sacher-Torte so special.
